Grilled Stone Fruit Salad

Ingredients:

- 1 Head lettuce or bunch spinach
- 1/2 red onion, sliced very thin
- Balsamic vinegar
- 1 Peach(medium-ripe)
- 1 Nectarine (medium-ripe)

Vinaigrette:

- Drizzle each ingredient in order while whisking constantly:
- 2 Tbsp Balsamic vinegar
- 2 Tbsp Maple syrup
- 2 Tbsp Olive oil
- Red chili flakes, to taste (optional)

Directions:

-1- Lightly coat onion slices in vinegar, add a pinch of salt. Set aside.
-2- Slice in half and de-pit stone fruits.
-3- Marinate halved and unpeeled fruit in vinaigrette for 1-2 hours.
-4- Set vinaigrette aside.
-5- Grill fruits on pre-heated BBQ over medium high heat, skin side up for one minute.
-6- Flip fruit to skin side down and grill for two minutes.
-7- Peel peach (if you wish). Slice each half into fifths.
-8- Toss torn lettuce leaves, onions and fruit in vinaigrette. Serve immediately.

Serving suggestions:

Replaces a rich dessert!
For different flavor, use rice wine vinegar and sesame oil instead of balsamic vinegar and olive oil
