Apple Muffins
Serves 4
Preparation: 10 mins + 30 mins baking
A delicious treat, packed with flavor, but not too rich. Great for a weekend breakfast with some fruit and hot tea.
Ingredients:
- 1 egg
- 1 fat-free vanilla yogurt
- 2 oz low-fat fresh cream
- 2/3 cup flour
- 1 package of yeast
- 2 apples
- 1/8 cup ground almonds
Directions:
1. Preheat oven to 350°F
2. Beat the egg, yogurt, fresh cream, flour, and yeast together.
3. Peel apples and cut into small pieces; add apples and almonds to the mixture.
4. Mix well and pour into patty pans or a muffin baking tin.
5. Bake for 30 minutes.
