Garbanzo Salad
This is a very refreshing summer salad, and can be made in just 15 minutes. It is high in protein, and can be kept in your refrigerator for a few days getting more flavorful as it marinates. It is a quick and easy way to have the healthy benefits of beans in your diet in a light and low fat way.
Ingredients:
Serves 4
- 2 medium fresh tomatoes, seeds and excess pulp removed, chopped about 1/2 inch thick
- 2 cups peeled diced cucumber, (cut lengthwise and scoop out seeds) dice about 1/2 inch
- 1/2 medium onion, finely minced
- 2 medium cloves garlic, pressed
- 1 15 oz can garbanzo beans, rinsed and drained well
- 3 tbsp fresh lemon juice
- 2 1/2 tbsp chopped fresh mint
- 2 tbsp extra virgin olive oil
- salt & cracked black pepper to taste
- 1 medium head romaine lettuce - use tender whole leaves for serving.
Directions:
Mix all ingredients except lettuce together and chill. This is best if it chills for at least 15 minutes. Serve on a bed of lettuce.
Note: Do not add salt to this salad until it's ready to serve. The salt will draw out the water from the cucumber and dilute the flavor.
