Stroganoff Mousse
This recipe is impressive!
A delicious dessert that will surprise all your guests, and a 100% healthy raw
dessert to end a complete meal!
Ingredients:
Serves 2
Cream:
- 1 cup raw cashew nuts
- ½ cup orange juice
- 4 pitted dates
- 1 tsp vanilla or almond extract
- 8 strawberries, coarsely chopped
- 4 other berries (different colors, for a pretty
presentation), or some kiwi, or orange sections
- A few mint sprigs
- A few drops of honey or agave nectar
Directions:
Soak the cashew nuts in water for 2 hours (If you soak them 4/5 hours, it is ok, because it’s raw food :). Drain the cashew nuts. In a blender, combine them with orange juice, dates, and vanilla or almond extract. Blend until you get a smooth, rich cream.
To serve: In a tall, large clear glass, pour some cream. Add some berries and garnish with a few mint leaves. Drizzle with agave nectar or honey.
