Turkey Roast with Veggies
This recipe is a full meal with a large variety of vegetables, rich in fiber, minerals, and vitamins. As for the turkey, it is the leanest meat ever!
Ingredients:
Serves 4
- 1 turkey roast
- 1 bunch turnips
- ½ lb carrots
- ½ green beans
- 1 bunch scallions
- ½ lb snap peas
- ½ lb peas
- ½ cup chicken stock
- 3 garlic cloves
- Salt + pepper
Directions:
Peel and rinse all the vegetables. In a large stockpot, simmer the turnips, snap peas, green beans, carrots, and onions over a low heat, with the lid on. Season with salt and pepper, and cook until all the veggies are fork-tender.
Prick the turkey roast with garlic. In an ovenproof roasting pot, sear the roast on all sides, turning frequently. Season with salt and pepper.
Heat the oven to 350 degrees F. Add the chicken stock to the pot and transfer to the oven. Cook for 50 min.
Serve the turkey roast with the vegetables.
